My name is Kolawole Banwo. I am a food microbiologist whose area of focus is bioactive components in foods, food safety, production of functional foods and product development. My current research is the exploration of the food microbiome of traditional fermented foods to increase potentials in bioactive components and the production of functional foods. I also work on the effects of fermentation on the metabolites produced during mycotoxin decontamination in grains. I am looking forward to having a valuable connection and discussion with specialists on this platform and to learn from their wealth of experience. I also look forward to foster collaboration with experts in the field of food science, food hygiene/safety and food biotechnology.
